Of the six sisters of American Whiskey — Bourbon, Rye, Malted Rye, Malted Barley, Corn, & Wheat — wheat is the smoothest and best tasting. But owing to its expense, wheat fell out of favor as a distilling grain over 150 years ago. We think it’s time wheat whiskey made a comeback. 2 1/4 oz. TOPO Organic Eight Oak Whiskey
2 tbsp Sorghum Syrup

1 tbsp Fresh Rosemary
1 2 inch strip Orange Zest
2 oz. Blenheim Ginger Ale
Ginger root slice

Combine sorghum syrup with rosemary and orange zest. Heat in a microwave for 30 seconds. Muddle well. (This can be done in advance.) Add whiskey. Stir well, making sure that the thick sorghum incorporates into the whiskey. Pour into a shaker. Add ice and ginger ale and shake vigorously until very cold. Strain into a chilled martini glass. Garnish with ginger root slice and rosemary.

2 oz. TOPO Organic Moonshine Carolina Whiskey
1/2 oz. Sweet Vermouth
1 capful Maraschino Liqueur
3 Dashes Orange Bitters

Combine ingredients in a pint glass. Add ice and stir well to chill down the mixture. Strain into a chilled martini glass. Garnish with a brandied cherry. 


1 1/2 oz. TOPO Eight Oak Whiskey
3/4 oz. Lemon Juice
3/4 oz. Lime Juice
3/4 oz. Simple Syrup
Dash of Angostura Bitters
Orange Slice

Combine ingredients in a shaker with ice. Shake vigorously until very cold. Pour into a rocks glass and garnish with an orange slice and a cherry. 

The famed James Beard once claimed that he did not like "fruit salad in his whiskey." He then deconstructed the mix to strike a proper sweet and citrus balance for his version of the classic Old Fashioned. 

2 oz TOPO Organic Eight Oak Whiskey
1/2 oz Simple Syrup (Preferred: Demerara)
2 Lemon Wedges
2 Dashes Bitters (Preferred: Crude Bitters, Fig and Orange flavors)
Orange Peel

In a shaker combine whiskey, syrup, bitters and the juice of both lemon wedges. Shake to mix. Add ice and stir. Pour into a rocks glass. Rub the oil of the orange peel around the rim of the glass, then lay the peel across the glass for a garnish.  


This is a variation on the classic old fashioned made with our un-aged moonshine whiskey. 

2 oz TOPO Organic Moonshine Carolina Whiskey
1 cherry, pitted 
1 orange wedge
3 lemon wedges
2 Dashes Angostura Bitters
1/2 oz. Simple Syrup
Orange slice

Muddle cherry, orange, and lemon wedges. Pour into a shaker and add bitters, simple syrup, and whiskey with ice. Shake to mix. Strain into a rocks glass with ice and garnish with an orange slice. 


2 oz. TOPO Organic Eight Oak Whiskey
5 tsp Honey Water*
1/2 oz. Lemon Juice
2 Dashes Angostura Bitters
Lemon Slice

*To make Honey Water: Combine honey and water in and stir. Place in microwave for 15 seconds and stir upon removal to completely dissolve the honey. 

Fill a rocks glass to the rim with ice and add all ingredients. Pour mixture into a shaker and shake vigorously, chilling mixture and crushing ice. Pour back into rocks glass and garnish with a lemon slice. 

(This is a recipe for sharing with a crowd.)

2 oz. TOPO Organic Eight Oak Whiskey
2 oz. Unsweetened Iced Tea
1/2 oz. Sage Simple Syrup*
1/2 oz. Lemon Extract
1/2 oz. Orange Juice
2 Dashes Crude Sycophant Bitters
Orange wedge

Fresh sage sprig

Mix all ingredients together in a shaker and shake vigorously until very cold. Pour into a rocks glass and garnish with an orange wedge and sage sprig.

To make Sage Simple Syrup: Bring one cup of water to a boil. Add 1 1/2 cups of sugar and simmer until clear. Add 20 fresh sage leaves and simmer for 10 minutes. Strain and cool. Simple syrup will keep in the refrigerator for 2-3 weeks.
