Top of the Hill Distillery crafts TOPO Organic Spirits at our facility in Chapel Hill, North Carolina. We started the distillery with a mission to take time-honored distilling traditions and add a twist--call it a Tradition 4.0 mentality. We are the only fully local and USDA certified organic distillery in the deep South; we were the first distillery of our size to incorporate a continuous column; we make the world's only fully organic NC grown 100% wheat whiskey; and on October 1st, we made the first legal liquor sale in NC outside of the ABC system. "TOPO Piedmont Gin is really interesting on the nose. The juniper is there, but itís subtle. More prominent are some soft, sweet vanilla aromas, plus some fruit, cardamom and a bit of mint. Drink up and you'll get more cardamom, some cucumber and plenty of citrus...This is an easy-drinking gin. Especially at 92 proof...And one thing we like the best: its base spirit, that soft winter wheat, is never overpowered. The sweetness of the wheat shines through to mingle with the botanicals."
